Esta versi\u00f3n no tiene mucho m\u00e1s misterio. Como no puedo poner enlaces a tooodos los estudios que he encontrado, creo que hay uno que lo resume todo de maravilla: <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27916819\" target=\"_blank\" rel=\"noopener noreferrer\">El valor nutricional y los beneficios para la salud de los garbanzos y el hummus<\/a>.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">En este estudio se ha demostrado que los consumidores de garbanzos y\/o hummus tienen una mayor ingesta de nutrientes como la fibra diet\u00e9tica, los \u00e1cidos grasos poliinsaturados, vitamina A, vitamina E, vitamina C, \u00e1cido f\u00f3lico, magnesio, potasio y hierro en comparaci\u00f3n con los no consumidores.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Las investigaciones recientes sugieren, adem\u00e1s, que los garbanzos y el hummus pueden desempe\u00f1ar un papel beneficioso en el control del peso y la regulaci\u00f3n de la glucosa y la insulina, adem\u00e1s de tener un impacto positivo en algunos marcadores de enfermedad cardiovascular. Los garbanzos crudos o cocidos y el hummus tambi\u00e9n contienen bioactivos diet\u00e9ticos como \u00e1cido f\u00edtico, esteroles, taninos, carotenoides y otros polifenoles como las isoflavonas, cuyos beneficios pueden extenderse m\u00e1s all\u00e1 de los requisitos nutricionales b\u00e1sicos de los seres humanos.<\/span><\/p>\n\n\n\n<h2><b>Por qu\u00e9 comer alcaparras<\/b><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">La idea de preparar un hummus de alcaparras me surgi\u00f3 porque, desde que vivo en Espa\u00f1a no suelo comerlas ya que no son de lo m\u00e1s com\u00fan en la dieta espa\u00f1ola. Sin embargo, de vez en cuando, me gusta recordar unos <strong>sabores m\u00e1s t\u00edpicos italianos<\/strong>.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Adem\u00e1s, cuando empec\u00e9 a investigar sobre las alcaparras, encontr\u00e9 algunos estudios interesantes. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">En un estudio del 2007<\/span><span style=\"font-weight: 400;\">&nbsp;se indica que al inhibir la acumulaci\u00f3n de productos de oxidaci\u00f3n de l\u00edpidos nocivos y aumentar el nivel de vitamina E biodisponible, <a href=\"https:\/\/pubs.acs.org\/doi\/10.1021\/jf0714113\" target=\"_blank\" rel=\"noopener noreferrer\">la alcaparra puede tener efectos beneficiosos para la salud,<\/a> especialmente para las personas cuyas comidas son ricas en grasas y carnes rojas. Vale la pena mencionar que la actividad antioxidante fue evidente a una proporci\u00f3n de alcaparras\/carne roja de 1:10, que corresponde con el uso de las alcaparras como saborizante para cocinar.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">En un estudio de 2018 <\/span><span style=\"font-weight: 400;\">donde se han revisado estudios sobre las propiedades fitoqu\u00edmicas y farmacol\u00f3gicas de las alcaparras, se indica que hay evidencia, aunque limitada, para sugerir los <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/29364841\" target=\"_blank\" rel=\"noopener noreferrer\">beneficios de las alcaparras para mejorar la salud humana<\/a>. Sin embargo, te puedes imaginar que unas alcaparras en vinagre tienen un <strong>sabor agrio<\/strong>. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">En esta receta he querido usar tanto las alcaparras como su jugo para resaltar a\u00fan m\u00e1s ese sabor agrio. Ten en cuenta, adem\u00e1s, que <strong>con el pasar de los d\u00edas ese sabor agrio se resaltar\u00e1 m\u00e1s<\/strong>. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Si no eres muy fan de un sabor de este tipo, puede prescindir del jugo de las alcaparras y usar solo agua. De esta forma seguir\u00e1s teniendo un hummus con sabor a alcaparras pero no se notar\u00e1 tan agrio. <\/span><\/p>\n\n\n\n<h2><b>Cu\u00e1ndo prepararlo y consumirlo<\/b><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">Todo el a\u00f1o. Como las alcaparras est\u00e1n en conserva y se pueden comprar durante todo el a\u00f1o, no tendr\u00e1s ning\u00fan problema en prepararlo tanto en invierno como en verano. Adem\u00e1s, a parte de las alcaparras, este hummus se prepara con ingredientes que deber\u00edas tener siempre en tu despensa como el tahini y los garbanzos.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\"><strong>En verano es perfecto para una merienda saludable con crudit\u00e9s de verduras<\/strong>. Mientras que cuando hace un poco m\u00e1s de fr\u00edo es perfecto para acompa\u00f1ar unas verduras al horno o alg\u00fan buddha bowl. Si est\u00e1 bien conservado puede aguantar hasta una semana en la nevera, aunque cuanto antes lo consumas, mejor. Y si se lo quieres llevar a un amigo o a un familiar para que prueben lo delicioso que es, puedes usar un bote de cristal de esos que tanto nos gusta reciclar.<\/span><\/p>\n\n\n\n<h2><b>Hummus de alcaparras para llevar<\/b><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">El hummus es uno de los alimentos <strong>ideales para un picnic o una barbacoa<\/strong>. Es muy f\u00e1cil de preparar y m\u00e1s a\u00fan de llevar. As\u00ed que prepara esos crudit\u00e9s de verduras antes de salir de casa y quedar\u00e1s s\u00faper bien en esa comida o cena a la que te han invitado. Por supuesto que es una opci\u00f3n ideal tambi\u00e9n para un brunch. Y si lo quieres llevar al trabajo para una merienda saludable, estoy segura que ser\u00e1s la envidia de la oficina.<\/span><\/p>\n\n\n\n<h2><b>\u00bfPuedo hacerlo de otros sabores?<\/b><\/h2>\n\n\n\n<p><span style=\"font-weight: 400;\">En internet existen un mont\u00f3n de recetas de hummus y creo que ya se han hecho recetas de hummus con cualquier sabor te puedas imaginar. As\u00ed que, por supuesto que puedes hacerlo de otros sabores y, adem\u00e1s, te animo a que experimentes t\u00fa misma. Adem\u00e1s, esta es una manera para ir introduciendo m\u00e1s verduras a tu dieta.
