Oatmeal Cups with Healthy Fillings

Oatmeal cups with strawberry yogurt filling

You just need a few ingredients to make these gluten-free oatmeal cups. They are sweet and can be enjoyed with different fillings. My favorite is the one with healthy Nutella. They are also perfect to be added to your Meal Planning or Batch Cooking.

Ingredients

½ banana, mashed

2 tablespoons raw honey

½ teaspoon vanilla extract

¼ teaspoon salt

½ teaspoon cinnamon 

¾ cups rolled whole oats (gluten-free if needed)

FILLINGS

3 strawberries

3 tablespoons Greek yogurt (dairy-free if needed)

2 tablespoons healthy Nutella

Instructions

FOR THE YOGURT AND STRAWBERRIES FILLING:

  1. In a small bowl, cut the strawberries in little pieces and mash them with a fork.
  2. Add the yogurt and mix well.

FOR THE OATMEAL CUPS:

  1. In a medium size bowl, mash the ½ banana with the help of a fork.
  2. Add ½ teaspoon cinnamon, ½ teaspoon vanilla, ¼ teaspoon salt, and 2 tablespoons of honey. Mix these ingredients well.
  3. Add the ¾ cups of oats and mix to incorporate the ingredients.
  4. Preheat the oven at 180ºC (350ºF).
  5. Grease and flour 6 cupcake molds (if needed)
  6. Divide the mixture into the 6 molds and use your fingers to give the shape of the mold. Try to make the bottom and the edges the same thickness.
  7. Bake for about 10 minutes until the edges start to get brown.
  8. Remove from the oven and let them cool.
  9. To remove them from the mold, once cold, press carefully on the edges of the cups to loosen them from the mold. Once the edges are not sticking, turn the cup slowly to take it out of the mold.
  10. Fill the cups with your favorite fillings. I used Healthy Nutella and strawberries with yogurt.

MAKE IT VEGAN

Substitute the honey for your favorite sweetener and add a tablespoon of tahini or almond butter. Make also sure that your filling is vegan.

HOW TO STORE IT

  • With the filling: in an airtight container for 2 days tops. 
  • Without the filling: in an airtight container for up to 5 days.
