Greek-Style Quinoa Bowl

This easy-to-make nut spinach salad is ready in just 15 minutes and is part of the FREE No-Waste Healthy Quick Meal Plan.



½ cup (70 g) quinoa
½ chicken breast
½ cucumber with skin, diced
1 medium tomato, diced
3 Tablespoons (30 g) goat cheese
12 black olives, halved or sliced
1 small red onion
1 Tablespoon parsley


2 Tablespoons olive oil
2 teaspoons apple cider vinegar
½ teaspoon mustard
¼ teaspoon salt
1/16 teaspoon black pepper


  1. Measure the quinoa and place it in a medium-sized bowl together with all the chicken breast left.
  2. Dice the cucumber and the tomato and add them to the bowl.
  3. Measure and add the goat cheese.
  4. Half or slice the black olives and add them to the bowl.
  5. Finely chop the red onion and add it to the other ingredients together with the chopped parsley.
  6. Prepare the vinaigrette by mixing all the ingredients in a little jar.
  7. Add half of the vinaigrette to the salad and save the rest in the fridge.
  8. Mix all the ingredients again and enjoy!
