Greek-Style Quinoa Bowl

Ingredients
½ cup (70 g) quinoa
½ chicken breast
½ cucumber with skin, diced
1 medium tomato, diced
3 Tablespoons (30 g) goat cheese
12 black olives, halved or sliced
1 small red onion
1 Tablespoon parsley
VINAIGRETTE
2 Tablespoons olive oil
2 teaspoons apple cider vinegar
½ teaspoon mustard
¼ teaspoon salt
1/16 teaspoon black pepper
Instructions
- Measure the quinoa and place it in a medium-sized bowl together with all the chicken breast left.
- Dice the cucumber and the tomato and add them to the bowl.
- Measure and add the goat cheese.
- Half or slice the black olives and add them to the bowl.
- Finely chop the red onion and add it to the other ingredients together with the chopped parsley.
- Prepare the vinaigrette by mixing all the ingredients in a little jar.
- Add half of the vinaigrette to the salad and save the rest in the fridge.
- Mix all the ingredients again and enjoy!
